Ingredients
- Instant pot
- Mixing bowl
- ½ cauliflower cut into large florets
- 1 large potato cut into ½ inch thick slices
- ½ large onion chopped
- 2 roma tomatoes cut into large chunks
- 2 tablespoons oil
- 1 teaspoons jeera (cumin seeds)
- 1 teaspoon rye (mustard seeds)
- ½ teaspoon hing (asafoetida)
- 1 teaspoon minced green chilies
- 1 teaspoon grated ginger
- ½ teaspoon red chili powder
- ½ teaspoon turmeric
- 1 teaspoon salt
- ¼ cup chopped cilantro for garnish (optional)
- ¼ cup water
Instructions
- Turn on the Instant Pot to SAUTE mode
- Wait until the Instant Pot display reads “HOT”
- In the mixing bowl, combine cauliflower, potatoes, turmeric, salt, chili powder, ginger, green chilies
- Mix well to coat the cauliflower and potatoes
- Add oil to the steel pot
- Add the rye (mustard seeds) and jeera (cumin seeds) and allow to pop
- Optional: Add the hing (asafoetida)
- Allow to sizzle for 30 seconds
- Add in the chopped onions and mix well
- Place the glass lid on the pot and allow to cook for 2-3 minutes
- Add the tomatoes to the onion mixture
- Place the glass lid on the pot and allow to cook for 2 minutes
- Add the cauliflower and potato mixture into the pot
- Add ¼ cup water
- Stir well to incorporate everything
- Close and lock the lid on the Instant Pot
- Turn the vent to sealing to prevent steam from escaping
- Press CANCEL on the Instant Pot
- Press MANUAL on the Instant Pot (LOW pressure)
- Set timer to 2 minutes
- Once the timer goes off, turn the vent on top of the lid to venting to release the steam (QR)
- Press CANCEL on the Instant Pot
- Carefully open the lid
- Garnish with cilantro
- Serve and enjoy!
