Now that our palettes have matured, we’ve grown to really like this one! This eggplant dish is quick, easy, flavorful, vegan and super healthy. Paired with khichdi and khadi, you’ll have the perfect Gujarati comfort meal in a jiffy.
EGGPLANT NU SHAAK IN THE INSTANT POT (Eggplant & Potato Curry)

Now that our palettes have matured, we’ve grown to really like this one! This eggplant dish is quick, easy, flavorful, vegan and super healthy. Paired with khichdi and khadi, you’ll have the perfect Gujarati comfort meal in a jiffy.

Ingredients
- Instant pot
- 2 tablespoons oil
- 1 teaspoon hing (asafoetida)
- 1 tablespoon sugar (optional)
- 1 teaspoon red chili powder
- 1 teaspoon dhana powder (dry coriander powder)
- ½ teaspoon jeeru powder (cumin powder)
- ½ teaspoon turmeric
- 1 ½ teaspoon salt
- 1 teaspoon minced garlic
- 1 teaspoon grated ginger
- 1-2 teaspoon minced green chilies per spice preference
- 4 roma tomatoes diced
- 2 medium russet potatoes peeled, washed and cubed
- 1 medium eggplant washed and cubed
- ¼ cup water
- Handful chopped cilantro for garnish
Instructions
- Turn on the Instant Pot to SAUTE mode
- Wait until the Instant Pot display reads “HOT”
- Add oil to the steel pot
- Add the hing (asafoetida) to the oil
- Allow to sizzle for 30 seconds
- Add in the tomatoes and mix well
- Allow to saute for 1 min
- Add in the eggplant, potatoes, all seasonings and spices except for the cilantro
- Mix well to coat the vegetables with the seasonings
- Add water
- Close and lock the lid on the Instant Pot
- Turn the vent to sealing to prevent steam from escaping
- Press CANCEL on the Instant Pot
- Press MANUAL on the Instant Pot (high pressure)
- Set timer to 8 minutes (10 minutes for more mushy eggplant)
- Once the timer goes off, turn the vent on top of the lid to venting to release the steam (QR)
- Press CANCEL on the Instant Pot
- Carefully open the lid
- If you want less liquid, turn on the Instant Pot to SAUTE mode and burn off water
- Press CANCEL on the Instant Pot
- Garnish with cilantro
- Serve and enjoy!
