Also, you can easily substitute the base for white rice, brown rice or even quinoa.

Ingredients
- Instant pot
- Instant Pot Vortex Air Fryer
- Large mixing bowl
- Wooden spoon or spatula
- Oven mitt
- Wide bowls for serving
- 1 cup Forbidden rice -washed and drained
- 14 oz Tofu cut into 1 inch cubes and marinated in Asian Marinade*
- 1 cup cold water
- 1 medium sweet potato peeled and diced
- 6-8 Brussels sprouts- washed, drained and sliced in half
- ½ teaspoon Salt
- ¾ teaspoon Black pepper
- 1 tablespoon sesame oil
- 1 cup cauliflower florets-washed and drained
- 1 cup broccoli florets- washed and drained
- Sambal chili paste
- 2 tablespoons soy sauce
- 1 tablespoon sweet soy sauce
- 1 tablespoon hoisin sauce
- 1 tablespoon rice wine vinegar
- 1 tablespoon sriracha
- 1 teaspoon sesame oil
Instructions
- Up to 24 hours before, marinate the tofu cubes and refrigerate
- In to the Instant Pot, add forbidden rice
- Add water
- Stir well
- Close and lock the lid on the Instant Pot
- Press MANUAL/PRESSURE COOK on the Instant Pot (HIGH pressure)
- Set timer to 20 minutes
- **For new pot, press Pressure Cook and turn and press the knob to select “Custom”
- Set timer to 20 minutes by turning and pressing knob. Press “Start”**
- Turn the vent to sealing to prevent steam from escaping
- While the rice cooks, air fry the vegetables and tofu
- Press AirFry and press +/- to set temp to 375 degrees
- Press +/- to set time to 15 minutes
- Press Start
- In a mixing bowl, add broccoli, cauliflower and sweet potatoes
- Add salt and pepper
- Add sesame oil
- Mix well to incorporate all ingredients
- Place all of the vegetables in the metal barrel
- Twist and lock barrel lid
- Open air fryer door
- Carefully place barrell inside the air fryer
- Close air fryer door
- Press “Rotate” on the air fryer
- When the Instant Pot timer goes off, allow pressure to naturally release for 10 mins
- When the air fryer times is done, carefully remove the barrel using oven mitts
- Allow to cool for a few minutes
- On the slotted trays, layer marinated tofu so that they do not touch
- Place tray into air fryer on center slot
- Press AirFry and press +/- to set temp to 375 degrees
- Press +/- to set time to 8 minutes (15 mins in the video resulted in extra crunchy tofu)
- Press Cancel on the Instant Pot and open lid
- Remove inner pot with forbidden rice
- Remove tofu tray using oven mitts once air fryer timer goes off
- In a bowl, add rice, add vegetables, add tofu and top with asian marinade and sambal (optional)

You can adjust the seasonings and air fryer timings according to your preference.
