Ingredients
- Instant pot
- cheesecake pan or steel container-greased http://amzn.to/2tXTm07
- trivet that came with the Instant Pot
- mixing bowl
- oven safe tray
- small pot for tempering the Handvo
- sansi/pakkad (Pot Handler)
- -OR- foil sling to transfer pan in and out of Instant Pot
- sheet of foil to cover cheesecake pan or container
- ⅔ package Gits Handvo Mix
- ½ cup yogurt
- 1 small dudhi (bottle gourd) peeled, grated and squeezed -found in Indian/Asian stores
- ½ cup frozen green peas and carrots
- ¼ cup frozen corn
- 2 tablespoons oil
- 1 tablespoon minced green chilies
- 1 tablespoon grated ginger
- 1 tablespoon sugar (optional)
- 1 tablespoon lemon juice or ½ teaspoon citric acid
- 1 tablespoon eno (fruit salt)
- 1 cup water for batter
- 1 cup water for steaming
- oil
- Rye (mustard seeds)
- Til (sesame seeds)
- 3 dried red chilies
Instructions
- In a bowl mix together: handvo mix, dudhi (gourd), carrots, corn, peas, ginger, green chilies, sugar and citric acid
- Add 1 cup water
- Mix well until all ingredients are completely incorporated
- Add the eno/fruit salt to the batter
- Mix well until the batter becomes frothy
- Add 1 cup water into the Instant Pot
- Place the trivet in the Instant Pot
- Carefully pour the batter into the greased cheesecake pan/container
- Cover the pan with foil
- Carefully place the pan with the batter on top of the trivet
- Place lid on pot and lock
- Close vent on lid to prevent steam from escaping
- Set pot to MANUAL mode
- Set timer to 30 minutes
- Allow pressure to naturally release for 10 minutes after the timer goes off (NPR)
- Manually release any residual steam by opening vent on the lid
- Carefully remove the foil from the pan
- Use a sansi/pakkad/pot handler to remove the pan on to an oven safe tray
- Heat your oven to BROIL
- Prepare the tempering mix by heating oil in a pot, adding rye (mustard seeds), sesame seeds and dry red chilies and allowing them to pop-cover with a lid to prevent burning yourself
- Using a spoon, add the tempering mixture evenly over the handvo
- Place the handvo tray on the top rack of your oven, keeping the door slightly open and allow to broil for 5-10 minutes
- When you achieve the desired crispness, remove the handvo from the oven
- Allow the handvo to cool slightly before handling
- Cut the handvo into slices
- Serve and Enjoy!!

You may add other vegetables such as grated zucchini or methi leaves to the batter.
