Kadhi is a soup-like yogurt based side dish found on every Gujarati menu. We tend to put kadhi into the comfort food category since it is most commonly served with rice. The only downside to making kadhi on your stovetop is having to stir constantly to avoid curdling. Once your kadhi curdles, there is no going back! Thanks to the Instant Pot version, there is no need to worry about constant stirring or watching over the pot- set it and forget it! We think this recipe will definitely make it into your weekly or even daily rotation thanks to how delicious and easy it is.
KADHI (GUJARATI)
Ingredients
- 3 qt Instant Pot
- 1 cup yogurt - use our recipe to make your own!
- 1 tablespoon ghee - use our recipe to make your own!
- ¼ cup besan (chickpea flour)
- 10-15 fresh or dried curry leaves
- 1 teaspoon grated ginger
- 1 teaspoon ground green chilies (or per taste)
- 1 teaspoon grated white turmeric (optional)
- ½ teaspoon whole cumin seeds
- ½ teaspoon salt
- 2 tablespoons chopped cilantro for garnish
- 2 cups water
- Whisk or hand blender
- Mixing bowl
- Glass lid
- Ladle
Instructions
- In a mixing bowl, add yogurt, chickpea flour, water, salt, chilies, ginger, white turmeric
- Using a hand blender or whisk, mix well
- Turn on the Instant Pot to SAUTE mode
- Wait until the display reads “HOT”
- Add the ghee to the pot
- Add the cumin seeds
- Allow the seeds to “pop”
- Add the curry leaves and close with a glass lid
- Allow to cook in the ghee for 1 minute
- Pour the yogurt mixture into the Instant Pot
- Close and lock the lid on the Instant Pot
- Turn the vent to sealing to prevent steam from escaping
- Press CANCEL on the Instant Pot
- Press SOUP on the Instant Pot
- Set timer to 5 minutes
- Once the timer goes off, allow the pressure to release naturally (NPR) for 10 minutes
- After 10 minutes, manually release the steam by opening the vent
- The silver prong will drop back into the lid. BE CAREFUL OF THE HOT STEAM
- The silver prong will drop back into the lid once the pressure has released
- Press CANCEL on the Instant Pot
- Carefully open the lid
- Serve in a bowl
- Enjoy!

This kadhi can be served with white or brown rice, khichdi or as a side dish with your favorite Gujarati meal.

Variations
You can omit the white turmeric if you cannot find it.
Add more or less water depending on how thick you want your kadhi to be.
If you prefer a less sour flavor, you can add a pinch of sugar to the final product.

VEGAN VARIATION: Unfortunately, we do not have a vegan variation for this recipe as it is a traditional yogurt based preparation.
