Beans, beans they’re good for your heart, the more you eat the more you…we all know how the rhyme goes! Love them or hate them, beans are full of so much nutritional value and we can’t forget how versatile they are. We’ve got a super easy pinto beans recipe which will spare you from the cycle of buying canned, preservative filled beans. This recipe makes quite a bit so you’ll have plenty to pull out of the fridge or freezer whenever your family wants fiesta night! We’ve blended up our pinto beans to be used in all kinds of Mexican and Tex-Mex dishes.
Mexican Style Pinto Beans

Ingredients
- 2 tablespoons oil
- ½ teaspoon hing (asafoetida)
- 4 tablespoons of your favorite taco seasoning
- 1 tablespoon salt
- 2 pounds dry pinto beans-washed
- 8 cups water
Instructions
- Turn on Instant Pot to SAUTE mode
- Add oil and allow to heat through 1-2 mins (oil will appear thinner in consistency and go to the sides of the pot)
- Add asafoetida (hing) and allow to sizzle
- Add in remaining ingredients to the pot: beans, taco seasoning, salt, water
- Stir until the ingredients are well mixed
- Press CANCEL button on Instant Pot
- Press the BEANS/CHILI button on Instant Pot
- Place lid on pot and lock
- Turn vent on lid to CLOSE VENT
- Once done, manually release the steam by opening the vent. BE CAREFUL OF THE HOT STEAM
- Carefully open the lid of the Instant Pot
- Stir the beans to make sure the taco seasoning is dispersed evenly
- You should not have to add extra water at this point- we will run the 2nd cycle now
- Press the BEANS/CHILI button on Instant Pot
- Place lid on pot and lock
- Turn vent on lid to CLOSE VENT
- Once done, manually release the steam by opening the vent. BE CAREFUL OF THE HOT STEAM
- Carefully open the lid of the Instant Pot
- Using a hand blender, carefully blend the beans to your desired consistency (you may also leave them whole if you would like). BE VERY CAREFUL AS THE BEANS WILL BE HOT AND COULD SPLATTER

Add garlic, peppers, vegetables to the beans before cooking
NO ONION/NO GARLIC VARIATION: Use taco seasoning which does not contain onions or garlic. You can also make your own seasoning mix using paprika, chili powder, cumin, salt and oregano.
Serve as a side dish or use in tacos, burritos, salads, etc. The possibilities are endless!
Storage: Store in the refrigerator to use in 2-3 days after cooking. Freeze remaining beans in small quantities to use later- in glass jars, plastic containers or freezer bags.
