Ingredients
- Instant pot
- 2 cups wild rice blend
- 2 cups vegetable broth
- 1 medium onion diced
- 1 8oz package baby bella mushrooms diced
- 1 teaspoon grated ginger
- 1 teaspoon minced garlic
- 3 teaspoons biryani masala (we used Mehran brand)
- ½ teaspoon turmeric powder (hurder)
- ½ teaspoon ground coriander powder (dhana powder)
- ½ teaspoon ground cumin powder (jeeru powder)
- 1 large cinnamon stick
- ½ teaspoon whole cumin seeds (jeera)
- 1 sprig fresh sage minced
- 1 sprig fresh rosemary minced
- 1 sprig fresh thyme minced
- 1 tablespoon oil
Instructions
- Turn on the Instant Pot to SAUTE mode
- Wait until the Instant Pot display reads “HOT”
- Add oil into the steel pot
- Add cinnamon stick and whole cumin seeds (jeera)
- Allow to heat for 1 minute until the spices become fragrant
- Add the onions and mushrooms
- Allow to saute for 2 minutes
- Add the ginger, garlic, cumin and coriander powder, turmeric, biryani masala and herbs
- Stir well
- Add the wild rice blend and vegetable broth
- Mix well to incorporate all ingredients
- Press CANCEL on the Instant Pot
- Press MANUAL/PRESSURE COOK on the Instant Pot (HIGH pressure)
- Set timer to 25 minutes
- Once the timer goes off, allow the steam to naturally release for 10 mins (NR)
- After 10 minutes, release the remaining steam by opening the vent
- Press CANCEL on the Instant Pot
- Carefully open the lid
- Gently fluff the rice with a fork
- Serve and enjoy!
Notes
If you prefer not to have the biryani flavor, you can omit the biryani masala.
