Now that the weather has cooled down, we are in the mood for a warm and comforting dish that comes together in no time. This paneer tikka pasta fuses the best of Italy and India into a dish that your whole family will crave year round. The perfectly cooked pasta, the soft paneer and the creamy sauce all come together in absolute harmony without any fuss. This is a perfect dish to meal prep with or even cook on a weeknight after work.

Ingredients
- Instant pot
- 2 cups farfalle or bowtie pasta
- 2 tablespoons oil
- 1 medium onion diced
- 1 tablespoon grated ginger
- 1 tablespoon minced garlic
- 1 28oz can crushed tomatoes
- 225 grams or 1 cup of fresh paneer cubed
- ½ packet of 1.76 oz Shan tikka masala powder
- 1 medium onion cut into large cubes
- 2 colored bell peppers cut into large cubes
- 8 oz heavy whipping cream
- 1.5 cups water
Instructions
- Turn on the Instant Pot to SAUTE mode
- If using the new pot, set to 3 minutes
- Add oil into the pot
- Add onions and saute for 3 minutes
- Add ginger and garlic and saute for 1 minute
- Add 2 tablespoons water to the pot
- Scrape off any bits stuck to the bottom of the pot
- Turn off saute mode
- Add crushed tomatoes, diced onions, bell peppers, paneer, tikka masala, pasta and water
- Stir well to incorporate all ingredients
- Close and lock the lid on the Instant Pot
- Turn the vent to sealing to prevent steam from escaping
- Press MANUAL/PRESSURE COOK on the Instant Pot (HIGH pressure)
- Set timer to 5 minutes
- **For new pot, press Pressure Cook and turn and press the knob to select “Custom”
- Set timer to 5 minutes by turning and pressing knob. Press “Start”**
- Once the timer goes off, carefully open the vent and allow the steam to release
- Press CANCEL on the Instant Pot
- Carefully open the lid
- Add heavy cream and stir well
- Turn on the Instant Pot to SAUTE mode
- Allow to simmer for 5 mins or until you reach the desired consistency
- Press CANCEL on the Instant Pot
- Serve and enjoy!
Notes
