This particular recipe may come across as a bit odd to those who aren’t familiar with this VERY popular Gujarati snack. Don’t worry, once you take a bite, there’s no turning back! Whether served with a piping hot cup of chai or on it’s own at breakfast, lunch or as a snack, you really can’t go wrong with this delicious treat!
Papdi no Loat

Serves: 4-6
Ingredients
- 2 cups rice flour
- 2 teaspoons green chilies-ground
- 2 teaspoons salt
- 2 teaspoon ajmo (carom seeds)
- 2 teaspoon jeeru (cumin seeds)
- ¾ teaspoon sanchoro/papad khar (an alkaline salt/baking powder)
- 2 teaspoons salt
- 3 ½ cups water + 1 ½ cups for the Instant Pot
- 1 tablespoon oil + extra to grease dishes and garnish
- 2-3 tablespoons of sesame seeds to garnish
- 2-3 tier stand to steam the flour in
- Optional garnish: fresh minced garlic and chopped cilantro
Instructions
- Turn on InstantPot to SAUTE mode and wait until the display reads “HOT”
- Add 3.5 cups water, carom seeds and cumin seeds to the pot
- Add the green chilies, salt, baking powder and stir well
- Simmer for 3-5 mins until the water becomes an amber color
- Press “Cancel” on your Instant Pot to turn it off
- In a large mixing bowl, add your rice flour
- To the flour, slowly add in the water mixture and mix well until you get a loose dough (see video)
- Grease three trays with oil
- Evenly pour the batter into the trays and set up your trays in the holder (if you do not have this stand, you can use a single tray)
- Pour 1.5 cups of water into the InstantPot
- Place the stand in the InstantPot (if you are using a single tray, place your tray on the trivet which came with the InstantPot)
- Place lid on pot and lock
- Close vent on lid to prevent steam from escaping
- Set pot to MANUAL mode
- Set to HIGH PRESSURE
- Set timer to 17 minutes
- Manually release steam by opening vent on the lid (BE CAREFUL OF THE HOT STEAM)
- Open the lid
- Use an oven mitt to remove the tray holder
- Carefully remove the trays - they will be HOT
- Drizzle oil and sprinkle sesame seeds on top of each tray
- Serve the Papdi no Loat using a spatula/spoon and enjoy!
- The loat will harden as it sits.
Notes
Serving Suggestion:
Garlic/Cilantro Oil: Warm up some oil for 1-2 minutes and add minced garlic and chopped cilantro. Drizzle this mix over the papdi no loat.
For a kick, sprinkle some pickle masala on the papdi no loat before serving.
