We had the opportunity to travel to Portugal and experience their flavorful cuisine. One of our favorite flavors from the region is the spicy and tangy Peri Peri sauce. This sauce is most commonly used on non vegetarian dishes such as chicken and seafood. We wanted our viewers to experience the flavors of Portugal through this Piri Piri chicken and rice dish. You will be in for quite a surprise after making this dish-it’s sure to tickle your taste buds! Also, keep an eye out for an extra special guest!

- Instant pot
- Tongs
- 1 zipper bag
- ¼ cup of your favorite Piri Piri sauce
- 2 chicken breasts
- 2 tablespoons olive oil
- 1 ½ cup water
- 1 cup long grain white rice
- 1 tablespoon Bouillon paste
- ½ teaspoon turmeric powder
- 2 cloves garlic minced
- ½ cupfrozen peas
- ½ cup red onion diced
- ½ cup red bell pepper diced
- ½ teaspoon salt
- 1 tablespoon Piri Piri seasoning-mix the following:
- 1 tablespoonsmoked paprika
- 1 ½ teaspoon cayenne powder
- 1 tablespoon garlic powder
- 1 tsp sea salt
- 1 tsp lemon pepper
- ½ tablespoondried oregano
- Keep the Instant Pot turned off
- Place the chicken breasts in a plastic zipper bag and pour the Peri Peri sauce over them
- Seal the zipper bag
- Mix the chicken in the zipper bag to fully coat each piece
- Allow to marinade for 30 minutes
- Turn on the Instant Pot to SAUTE mode
- Add olive oil to the pot AFTER the display reads “HOT”
- Place each chicken breast into the pot and allow to brown on one side for 3-4 minutes
- Press CANCEL on the Instant Pot
- Remove the chicken from the pot and set aside in a dish
- Add water to the pot and scrape up any burnt bits
- Add rice, salt, Piri Piri seasoning, turmeric, bouillon paste, garlic
- Stir to combine all ingredients thoroughly
- Add peas, onions and bell pepper-do not stir
- Place the chicken breasts on top of the peas, onions and bell peppers
- Close and lock the lid on the Instant Pot
- Turn the vent to sealing to prevent steam from escaping
- Press MANUAL on the Instant Pot (high pressure)
- Set timer to 6 minutes
- Once the timer goes off, allow the pressure to naturally release (NPR) for 5 mins
- After 5 minutes, turn the vent on top of the lid to venting to release any residual steam
- Press CANCEL on the Instant Pot
- Carefully open the lid
- Remove the chicken on to your serving dish
- Fluff the rice with a fork and serve with the chicken
- Enjoy!
For extra spice, drizzle some Peri Peri sauce over the chicken and rice.
Variations
Vegetarian: Omit the chicken and add extra vegetables to the rice
