Ingredients
- Instant pot
- Trivet which comes with the Instant Pot
- Paniyaram pan
- Mixing Bowl
- 1 cup sabudana (tapioca pearls) soaked overnight 6-8 hours
- 2 medium potatoes
- 2 tablespoons coarsely crushed peanuts
- 2 tablespoons raisins
- 2 tablespoons grated coconut
- 2 tablespoons sesame seeds
- ½ teaspoon minced green chilies or to taste
- ¼ teaspoon minced ginger (optional)
- 1 teaspoon salt or sindhav/sendha namak for fasting
- 1 tablespoon lemon juice
- 1 teaspoon sugar
- 2-3 tablespoons peanut oilto grease paniyaram pan
- ½ cup water
Instructions
- Place trivet in the Instant Pot
- Pour ½ cup water in the pot
- Place the potatoes on top of the trivet
- Close and lock the lid on the Instant Pot
- Turn the vent to sealing to prevent steam from escaping
- Press CANCEL on the Instant Pot
- Press MANUAL/PRESSURE COOK on the Instant Pot (high pressure)
- Set timer to 8 minutes
- After soaking the tapioca overnight, drain and rinse
- In bowl, combine tapioca, peanuts, raisins, coconut, chilies, ginger, salt, lemon juice and sugar
- Once the timer goes off, turn the vent on top of the lid to venting to release the steam (QR)
- Press CANCEL on the Instant Pot
- Carefully open the lid
- Remove and peel the potatoes
- Mash the potatoes once they are cool enough to handle
- Add mashed potatoes to the tapioca mix
- Mix well to incorporate all ingredients thoroughly and set aside
- Preheat the paniyaram pan on low to medium low heat
- Add a drop of oil to each of the openings in the paniyaram pan
- Add about a tablespoon of the tapioca mixture into each opening
- Allow to cook for 4-5 minutes
- Flip the vada (fritters) and allow to cook 3 minutes
- Remove the vada (fritters) using a spoon
- Serve and enjoy!
