Ingredients
- Instant pot
- Trivet that came with the Instant Pot
- Mixing Bowl
- Slotted Spoon
- Oven Mitts
- Whisk
- Small bowl
- 5-8 lb bone in turkey breast
- 1 medium onion cut into large chunks
- 1 large carrot cut into large chunks
- 1 large red apple cut into large chunks
- 1 teaspoon minced garlic
- 1 teaspoon grated ginger
- 4 tablespoons Shan Tikka Masala powder
- 2 tablespoons poultry herbs minced: sage, rosemary, thyme
- Cajun Seasoning Marinade with Injector
- 2 tablespoons ghee
- 2 tablespoons water
- 1 cup chicken broth
- 2 tablespoons butter
- 2 tablespoons cornstarch
Instructions
- Turn Instant Pot to SAUTE mode
- Add butter to pot
- Add apple, onion, carrot
- Add chicken broth and stir
- In mixing bowl, combine herbs, tikka powder, ginger, garlic and ghee
- Add 2 tablespoons water and mix well to form a paste
- Set aside tikka spice paste
- Using marinade syringe, inject turkey in multiple areas over the breast
- Coat turkey with tikka spice paste
- Press CANCEL on the Instant Pot
- Place the trivet in the Instant Pot on top of the veggies
- Place turkey on top of the trivet, breast side down
- Place any remaining apples, carrots, onions around the turkey
- Close and lock the lid on the Instant Pot
- Turn the vent to sealing to prevent steam from escaping
- Press MANUAL on the Instant Pot (LOW pressure)
- Set timer to 32 minutes
- Once the timer goes off, allow the steam to release naturally until the pin drops
- Press CANCEL on the Instant Pot
- Carefully open the lid
- Using oven mitts or paper towels, remove the trivet with the turkey from the Instant Pot
- Place in your serving tray
- To make gravy:
- Using slotted spoon, remove large vegetable chunks left in the drippings in the steel pot
- Turn on the Instant Pot to SAUTE mode
- In a small bowl, add cornstarch and 3 tablespoons of drippings liquid
- Whisk well to remove any lumps
- Add cornstarch slurry back into the drippings in the steel pot
- Allow to simmer until the gravy thickens to your liking
- Slice turkey and serve with gravy
