Independence Day in the USA means family and friends getting together for picnics, bbqs and enjoying endless food and drinks. Why not create some fireworks of your own with this red, white and blue themed cake? Your guests will think you worked all day on this piece of art which will be devoured within minutes!

Ingredients
- Your favorite boxed cake mix-use white/vanilla cake
- Ingredients as listed on the boxed cake mix
- Gel food coloring to color layers red and blue
- Oil/butter/vegetable spray for cake pans
- Your favorite store bought frosting -any white colored frosting
- Washed and Sliced strawberries
- Washed blueberries
- Sprig of fresh mint (optional)
Instructions
- In a mixing bowl, prepare the cake batter as written on the box
- Divide batter evenly into 3 bowls
- Add blue gel coloring to one bowl and mix well
- Add red gel coloring to one bowl and mix well
- Leave the cream/white cake batter as is
- Coat each of the 3 cake pans with oil, butter or cooking spray
- Pour each bowl of batter in each cake pan making sure not to mix the colors
- Add one cup of water into the InstantPot
- Place the stand which came with the InstantPot inside the pot if your pan does not have a built in stand
- Place pans in the Instantpot
- Close and lock the lid of the InstantPot
- Close the valve on the lid so that no steam is released during cooking
- Press MANUAL mode on the InstantPot
- Make sure the InstantPot is on HIGH PRESSURE
- Set the timer to 25 minutes
- You may make your own icing during this time or use store bought icing
- After the timer goes off, allow the pressure to RELEASE NATURALLY (this may take 10-12 minutes)
- Once the pressure has naturally released and the silver prong has dropped down, open the lid
- Press OFF/CANCEL on the InstantPot
- Carefully remove the pans from the InstantPot using an oven mitt or something else-PANS WILL BE VERY HOT!
- Cool the pans on a baking rack or a towel until they come to room temperature
- Carefully remove the red cake layer from the pan using a spatula and place it on your cake serving dish
- Frost the top of the red cake with your icing
- Carefully remove the white cake layer from the pan using a spatula and place it on top of the iced red layer
- Frost the top of the white cake with your icing
- Carefully remove the blue cake layer from the pan using a spatula and place it on top of the iced white layer
- Frost the remaining cake until it is completely covered on all sides
- Garnish with blueberries, strawberries and mint(optional)
- If you are not serving the cake right away, keep it in the refrigerator until ready to serve
- Slice and enjoy!
