Vegetable Lo Mein in the Instant Pot

Noodles are a great way to get your family to eat veggies. We’ve loaded up this lo mein dish with lots of veggies and sauces to make it extra delicious. The great thing about lo mein is how versatile it is; you can add veggies, tofu, meat and get a great meal out of it.

Ingredients
- Instant pot
- Glass lid
- 1 tablespoon sesame oil
- 1 teaspoon minced garlic
- 1 teaspoon grated ginger
- 1 teaspoon Sambal (chili garlic hot sauce)
- 1 teaspoon Sriracha
- 1 tablespoon sweet chili sauce
- 1 tablespoon hoisin
- ¼ cup soy sauce
- 2¼ cups vegetable broth
- 1 red onion roughly sliced
- ½ cup shredded carrots
- ½ large bell pepper cut into thick slices
- 6-8 fresh broccoli florets
- ½ cup baby bella mushrooms (crimini mushrooms) sliced thick
- 8 oz lo mein noodles
Instructions
- Turn on the Instant Pot to SAUTE mode
- Add sesame oil to the pot AFTER the display reads “HOT”
- Add in the onions, garlic and ginger and saute for 2 mins with the glass lid covering the pot
- Press CANCEL on the Instant Pot
- Add in the vegetable broth and scrape off any burnt bits on the bottom of the pot
- Add the sambal, sriracha, sweet chili, hoisin and soy sauce and stir well
- Add the dry noodles into the pot
- Mix the noodles to coat with the sauce mixture
- Place the broccoli, carrots, bell peppers and mushrooms on top of the noodles-do not stir
- Close and lock the lid on the Instant Pot
- Turn the vent to sealing to prevent steam from escaping
- Press MANUAL on the Instant Pot (high pressure)
- Set timer to 5 minutes
- Press CANCEL on the Instant Pot
- Once the timer goes off, turn the vent on top of the lid to venting to release the pressure
- Carefully open the lid
- Using tongs, gently mix the noodles and vegetables
- If there is too much liquid, burn it off on SAUTE mode
- Enjoy!

Add even more vegetables or tofu to use as a main dish.
